Bioactive Components of Berry Fruits and Their Effects on Human Health
(Sidas Medya A.S., 2022) Bayram, Hatice Merve; Öztürkcan, Arda
Berry fruits and their products are known as “functional foods” and have a growing interest in the food industry. Berries have high antioxidant capacity and anthocyanin contents in comparison to other fruits, and they are considered to have protective effects on human health by reducing the risks and symptoms of diseases. Although Turkey is in a prominent position with fruit production, having in the fifth place in the world according to the 2019 Turkey Statistical Institute (TUIK) data, the amount of berry fruit production is low, and its importance is still poorly understood. For this reason, it is very important to increase the interest in berry fruits, which are thought to have a positive effect on health, in our country, both scientifically and economically in order to increase their production. This review aims to evaluate the bioactive compounds of berry fruits and their health effects on human with clinical studies conducted in the last decade. To reach this goal, a literature search was conducted in DergiPark, PubMed, Elsevier and Google Scholar databases and a total of 32 international clinical studies were included in this non-systematic review. No clinical human study was found in Turkey. Results showed that berry fruits have anti-oxidant, anti-inflammatory, anti-diabetes effect and protective effect on the cardiovascular system, effect of improved lipid metabolism, anti-hypertension effect, and reducing effect of colon cancer symptoms and beneficial effects on microbiota by positively affecting human health. More clinical studies are needed to understand the exact mechanisms and long-term effects. © 2022 Sidas Medya A.S.. All Rights Reserved.

Consumer Acceptance, Attitude and Knowledge Studies on Alternative Protein Sources: Insight Review
(2024) Can, Başak; Majoo, Fuzail; Öztürkcan, Arda
As the world's population grows and climatic conditions worsen, the world's current resources are rapidly depleting. Human behavior exacerbates this adverse situation. One of these behaviors is traditional eating habits. A traditional diet that consists of animal-based proteins consumes more resources and pollutes the environment to a greater extent. The traditional diet, which consists of mostly animal-based proteins, may turn towards plant-based proteins. In addition to plant-based proteins, in recent years scientists have focused on exploring alternative protein sources that do not pollute the environment and require fewer resources. Plant-based proteins, algae, insect-based proteins, and cultured meat have all been identified in the literature as alternative protein sources that may be consumed alone (in dry or concentrated form) or added to foods. While alternative protein sources are still being developed, the consumer's opinion on these sources is being assessed. So, in this review, consumers' knowledge, acceptance, and attitude to alternative protein sources are discussed. Data shows that plant-based protein sources, including algae, are now widely claimed to be more accepted than traditional protein sources. It has also been established that most individuals are prejudiced toward insect-based protein and cultured meat due to lack of sufficient information.

Determination of Nutrient Density in Dormitory Menus: Samples of State, Private, and Semi-Private Dormitories
(ACIBADEM MEHMET ALİ AYDINLAR ÜNİVERSİTESİ, 2024) Bayram, Hatice Merve; Öztürkcan, Arda
Purpose: This study aimed to evaluate the menus of university dormitories in Istanbul according to nutrient profiling and to determine whether energy and other nutrients meet the needs of students. Methods: The lunch menus served in winter in three different dormitories (state, private, and semi- private) in Istanbul were examined according to the nutrient profiling (Nutrient Rich Foods NRF9.3 and 15.3 indexes). The energy and nutrient contents of the menus were compared with national and international references values according to the Turkey Nutrition Guide-2022. Results: The highest NRF9.3 ve 15.3 score was found in private dormitory menus (70.99 ± 47.80, 75.50 ± 52.40), followed by state dormitory menus (63.80 ± 23.71, 67.09 ± 23.73) and semi-private dormitory menus (58.79 ± 38.32, 62.51 ± 41.62). There were no statistically significant differences for NRF9.3 and 15.3 scores between the dormitory menus. Additionally, total fat, saturated fat, and sodium contents were higher in the menus of dormitories, especially state dormitories menus. A significant difference was found between the menus of state and semi-private dormitories for total fat, and saturated fat (p:0.003, p: 0.015), whereas a statistical difference was found between state and private dormitories for sodium (p: 0.007). Conclusion: Considering the high sodium, total and saturated fat contents of dormitory menus, the standard recipes applied should be improved in terms of salt and fat contents. Therefore, it is of great importance that menus are prepared by dietitians who have been trained in this field and have sufficient knowledge, skills, and equipment.

The relationship between dietary polyphenol intake and adherence to the Mediterranean diet, mental health, and sleep quality among Turkish adults: A cross-sectional study
(ScientificWebJournals (SWJ) Özkan Özden, 2024) Bayram, Hatice Merve; Aydın, Adile Gizem; Okur, Hilal; Karalı, Ahmet Evren; Öztürkcan, Arda
A high intake of polyphenols has been shown to benefit health, protect against the risk of mental disorders, and improve sleep quality. This study aimed to determine the relationship between polyphenol intake, sleep quality, depression, stress, and anxiety in Turkish adults. This cross-sectional study was conducted with adults aged 18-64 between December 5, 2023, and May 12, 2024, in Istanbul, Türkiye. Participants completed a questionnaire with demographic characteristics, the Mediterranean Dietary Adherence Screener (MEDAS), the Depression Anxiety Stress Scale, the Pittsburgh Sleep Quality Index, and a 7-day food consumption record. Data were analyzed using SPSS 24.0. One hundred nineteen adults (73.1% female, mean age 23.69 ± 3.76 years) participated. There was a statistically significant difference in MEDAS classification across tertiles of polyphenol intake (p: 0.015). After controlling for confounders, the depression score significantly decreased across tertiles of polyphenol intake (OR: 0.990, p: 0.001). Similar results were observed for the anxiety score (OR: 1.006, p< 0.001). MEDAS scores showed a statistically significant difference across tertiles in unadjusted and all adjusted models (p: 0.049, p: 0.030, p: 0.020, and p: 0.015, respectively). Our findings revealed that dietary polyphenols may have a beneficial effect on depression and anxiety.
