dc.description.abstract | In the previous issue, I touched upon the historical development of Istanbul cuisine. In my first article, I discussed how the Turks began to settle in Istanbul during the reign of Fatih Sultan Mehmet, bringing with them the culinary traditions of Central Asia, Anatolia, and the Seljuk Empire. I explored how these influences, combined with the impact of many ancient civilizations, shaped Istanbul's unique cuisine. | |
