Özet

Food sovereignty is not only a demand for economic independence; it is also the liberation of our palate, our memory, and our identity. Gastronomy serves as a mirror, reflecting a society's lifestyle, history, and values. As this mirror cracks, the face we see becomes blurred. Along with the industrial food system, our local culinary cultures are rapidly disappearing: Instead of buttermilk, villages now serve carbonated drinks; village bread is being replaced by standardized bakery bread. Homemade jams, pickles, and molasses, symbols of our hospitality, are being erased from tables under the pretext of "hygiene" or "convenience."
