When examining human history, fruits and vegetables have always been among the most essential nutrients. As we enter May, the arrival of spring brings an abundance of seasonal fruits and vegetables, offering us the opportunity to enjoy fresh produce. Let me start by emphasizing this: Consuming fresh fruits and vegetables is the cornerstone of a healthy diet, especially during childhood, middle age, and older adulthood. Fruits and vegetables are the edible parts of plants. Since they contain a high amount of water, they contribute more to meeting vitamin and mineral needs than energy requirements. They are particularly rich in folic acid, vitamins A, E, C, and B, as well as calcium, potassium, iron, magnesium, fiber, and other antioxidant compounds. Antioxidants play a crucial role in eliminating harmful substances from the body or reducing their effects.
