Science in the Kitchen-April 2024 : Istanbul Cuisine: A Cuisine Bringing Together Ancient Cultures

I have been studying Istanbul cuisine for a long time. As I delved deeper into my research, I discovered that Istanbul cuisine has been nourished by many ancient civilizations, as I mentioned in the title. For us, the flourishing of Istanbul cuisine began with the conquest of Istanbul by Fatih Sultan Mehmet. Fatih brought to Istanbul a culinary tradition that was a synthesis of Central Asian nomadic cuisine, Seljuk cuisine, and Anatolian cuisine.
