Determination of the relationship between obesity prejudice status and eating behaviors of faculty of health sciences students

Background People living with obesity receive treatment services from health professionals for their weight or other
health needs. In order for the students of the Faculty of Health Sciences, who will be a member of the health team
in the future, to raise awareness of the society, it is necessary to first determine their obesity prejudices and eating
habits.
Methods The study is a cross-sectional and descriptive research. The study data were collected from 406 students
studying at the Faculty of Health Sciences by online questionnaire method using a personal characteristics
identification form, GAMS 27-Obesity Bias Scale and University Students Eating Behavior Scale (USEBS). The data were
analyzed with SPSS 26 statistical software.
Results In this study, all students were found to be prone to prejudice according to the mean total score of the
Obesity Bias Scale and Obesity Bias Scale was higher in female students studying in perfusion department. In the
sub-dimensions of the University Students Eating Behavior Scale, the enjoyment of food score was found to have the
highest mean score.
Conclusion According to the results of the study, there is a need to develop educational planning that will both
increase the awareness of university students about the relationship between eating behaviors and obesity and
eliminate obesity prejudice tendencies due to the fact that they are educated to provide services in the field of health.
Highlights
• It was determined that students were prone to prejudice against individuals with obesity.
• It was found that the satiety sensitivity sub-dimension score of the students studying in the nutrition
department was high.
• The mean Obesity Bias Scale score of the students studying in the perfusion department was found to be
high.
• There was a negative relationship between age and food sensitivity, eating pleasure, emotional overnutrition,
hunger and obesity bias, and a positive relationship between satiety sensitivity.
Developing machine learning‑based ground motion models to predict peak ground velocity in Turkiye

This paper introduces machine learningbased Turkiye-specifc ground motion models for
the geometric mean horizontal component of peak
ground velocity (PGV). PGV is a signifcant intensity metric to measure and diagnose potential earthquake damage in structures. Reliable prediction of
PGV is of essential importance in precise calculations
of seismic hazard. The efciencies, reliabilities, and
capabilities of various machine learning algorithms,
including Random Forest, Support Vector Machine,
Linear Regression, Artifcial Neural Network, Gradient Boosting, and Bayesian Ridge Regression, are
evaluated and compared. The most recently compiled
Turkish strong motion database, which consists of
over 950 earthquakes occurring from 1983 to 2023, is
used for shaping the models’ ability to learn and make
accurate predictions. Three feature selection methodsLeast Absolute Shrinkage and Selection Operator,
Recursive Feature Elimination, and Pearson’s Correlation- representing embedded, wrapper, and flter
approaches, respectively, are applied to determine the
most suitable estimator parameters to predict PGV.
Residual analyses and statistical evaluation metrics
are employed to measure the performance and efectiveness of the machine learning models. Among the
algorithms applied, Gradient Boosting demonstrates
exceptional success in predicting PGV, particularly
when utilizing all estimator parameters (features)
collectively. The Gradient Boosting model exhibits
superior predictive capabilities compared to existing
ground motion models. It is applicable to shallow
crustal strike-slip and normal faulting earthquakes
with moment magnitude ranging from 3.5 to 7.8 and
Joyner and Boore distance up to 200 km.
Valorisation of cold plasma-treated onion skin waste in chocolate production

Onion skin is generated in high amounts as food waste that is rich in bioactive components. Thus, the
valorisation of onion skin waste in food production following suitable methods of treatment can be
regarded as a sustainable strategy in terms of nutrition, economy, and environment. Skin waste from
onions (Allium cepa) was ground and exposed to dielectric barrier discharge cold plasma (DBDCP) at
40 kV for either 0 or 30 min. Then the cold plasma-treated onion skin powder (OSP) was added to chocolate at a concentration of 0%, 1%, or 2% (w/w). The DBDCP-induced changes in the microbial load,
colour, water content, total phenolic content (TPC), and antioxidant activity of OSP were assessed. The
TPC, antioxidant activity, and sensory properties of the chocolate samples added with OSP were also
monitored. Cold plasma treatment increased the TPC and antioxidant activity of OSP, but it did not
affect the water content, colour, and microbial load. The antioxidant activity and TPC of the chocolate
samples incorporated with DBDCP-treated OSP at a level of 2% were higher than the samples with or
without untreated OSP. However, the samples with 2% DBDCP-treated OSP demonstrated lower overall
acceptability scores compared to samples without OSP. It can be said that cold plasma can be utilised in
the treatment of onion skin waste and valorisation of cold plasma-treated onion skin waste in the production of chocolate to improve its antioxidant properties. Future studies can focus on the enhancement of
the sensory properties of onion skin-added chocolate products.
