dc.description.abstractTRANSFORMING FOOD WASTE INTO VALUE: NEW HORIZONS IN FRUIT AND VEGETABLE PROCESSING RESIDUES Although the fruit and vegetable processing industry plays a significant role in the food supply chain, it also brings about environmental challenges due to the organic waste generated during production processes. Residues such as peels, seeds, pulp, and fibers are not merely waste—they carry great potential as sources for biofuel, natural additives, compost, animal feed, and biologically active compounds. The proper evaluation of these materials offers a critical opportunity for both economic and environmental sustainability [1-3].
