Türkiye'de Kanatlı Et Sektörünün Ekonomideki Yeri ve Gelecek Projeksiyonu ile İncelenmesi

Abstract

Kanatlı et sektörü, hayvancılık sektörünün teknolojiye en açık ve en gelişmiş sektörüdür. Üretiminin kolay ve hızlı olmasının yanında maliyetinin de düşük olmasından dolayı hayvansal protein açığının kapatılmasında önemli rol oynamaktadır. Ayrıca, sağlıklı beslenme konusunda her geçen gün daha da duyarlı davranmaya başlayan tüketiciler kırmızı ete alternatif olarak, daha ucuz ve daha az yağlı olan kanatlı etlere yönelmiştir. Bu çalışmada; Kanatlı et sektörünün Türkiye ekonomisindeki yeri üzerinde durulup, sektörün 2017-2031 yılları arasındaki talep projeksiyonları yapılmıştır. Türkiye'de kırmızı et arzının ve fiyatlarının istikrarsızlığı, kanatlı eti sektörünü ön plana çıkarmış ve son yıllarda sektör büyük gelişme sağlamıştır. Çalışmanın uygulama kısmında araştırmanın amacı, kapsamı, araştırmanın modelleri ve kullanılan modellerin sonuçları verilmiştir. Bu sonuçlar tavuk eti talebinin her yıl istikrarlı bir şekilde artacağını göstermektedir. Bu artışı karşılamak için sektörün yıllık ortalama %5' lik bir büyüme artışını yakalaması gerekmektedir. Bu büyüme oranını yakalayabilmek için sektörün başlıca sorunları olan yemlik hammadde sorunu, ihracat sorunu ve damızlık üretimindeki sıkıntılar gibi sorunlara çözüm önerileri getirilmelidir.

The poultry meat sector is the most advanced sector of the livestock industry which is most adaptable to technology. In addition to being easy and fast to produce, it also plays an important role in the closure of animal protein deficiency because of its low cost. In addition, consumers who are becoming increasingly sensitive about healthy nutrition are turning to cheaper and less fat winged meats as an alternative to red meat. In this study which focuses on the location of the poultry meat sector in Turkey's economy, the industry's demand projections between the years 2017-2031 are provided. Due to the instability of red meat supply and prices in Turkey, the poultry sector has provided great improvements in recent years. The purpose, scope, research models and the findings are provided in the analysis section of the study. These results illustrate that the demand for chicken meat will increase steadily every year. To meet this increase, the sector needs to catch up with an annual average growth rate of 5%. In order to achieve this growth rate, it is necessary to propose solutions to the main problems of the industry such as the problems deriving from feedstock, exportation and breeding production.
